Slow cooker pork loin with honey and balsalmic glaze

Ingredients

  • 2 lb pork loin or pork tenderloin
  • Salt and pepper to taste
  • 2 cloves of garlic, minced
  • 1 tsp dried sage
  • 1-2 cups of chicken or beef stock, enough to almost cover meat in the slow cooker
  • For the glaze:
  • 5 TBSP raw honey
  • 1/4 cup balsamic vinegar
  • 2 TBSP coconut aminos
  • 1/2 cup chicken or beef stock
  • 1 TBSP tapioca flour

Directions

  1. Combine garlic, sage and salt and pepper and mix pork in this

  2. Place pork in slow cooker and cover with stock

  3. Cook on LOW for 6-8 hours

  4. Just before pork is ready, prepare the glaze by combining ingredients in a small saucepan over the stove

  5. Arrange pork on plate and cut across the grain or shred. Spoon glaze over pork and serve
