Farmhouse Meatloaf

Ingredients

  • 2 pounds ground beef (grass fed preferred)
  • beaten eggs
  • cup carrots, finely chopped, 1 cup spinach, finely chopped
  • small red onion, finely chopped, 4 garlic cloves, minced
  • tablespoons tomato paste
  • teaspoon salt (optional)
  • 1/2 teaspoon ground black pepper
  • tablespoon dried parsley (or 2 tablespoons fresh parsley. finely chopped)
  • 1/4 teaspoon dried rubbed sage (or 1/2 teaspoon fresh sage, finely chopped)
  • 1/4 teaspoon dried basil (or 1/2 teaspoon fresh basil, finely chopped)

Directions

  1. In a large mixing bowl, combine all ingredients. Using your hands, work the ingredients together.

  2. Place meat mixture in a loaf pan or, my personal favorite, a 10-inch iron skillet.

  3. Bake at 350 degrees F for 60 to 80 minutes (depending on your oven and the pan you use). I use a meat thermometer to be sure it reaches 170 degrees internal temperature.
