Aunt Molly’s Spinach Casserole

This was my great aunt Molly’s standard holiday dish. After her death, I started bringing it to family gatherings, because it’s just not the holidays without Aunt Molly’s Spinach Casserole. Easy, quick, and delicious.

Cook time: 45 minutes
Serves 12 people

Ingredients

  • 2 cups Ritz cracker crumbs (1 sleeve)
  • 2 cups milk
  • 2 packages frozen spinach (cooked)
  • 4 eggs
  • 1/2 stick margarine
  • 2 cups shredded sharp cheddar cheese, divided
  • 1 - 2 teaspoons nutmeg (adjust amount for personal preference)
  • salt and pepper to taste

Directions

  1. Mix together all ingredients, reserving 1 cup of cheese. Pour into buttered 9 × 13 baking dish. Mixture will be soupy, and needs to be spread out evenly.

  2. Layer reserved cheese over top.

  3. Bake at 350 for 45 minutes.
