Sparkling Ginger-Peach Spritzer

Ingredients

  • 4-6 peaches (about 1 1/2 cups puree)
  • 1 tbsp lime juice
  • 1-2 tsp grated ginger
  • 1/4-1/3 cup honey (optional)
  • 3-4 cups sparkling mineral water

Directions

  1. If you don’t have a high-powered blender and don’t want to strain your puree, first peel your peaches. (I peel mine for my cheap blender.)

  2. Remove peach pits and puree peaches in a blender. Strain peach puree with a fine mesh strainer if desired to remove small bits of peel and make smoother puree. (I don’t strain mine when I peel them.)

  3. In blender, add lime juice, ginger, and optional honey to peach puree. Blend to incorporate. Taste puree and add more honey and ginger if needed. It should taste slightly sweet since we are adding it to the mineral water.

  4. Divide puree into 4 large (or 6 small) glasses and top off with mineral water. Garnish with lime or peach slices.

  5. To make ahead: pour peach puree in a pitcher and slowly pour in mineral water. Chill until ready to serve.
