St. Paddy’s Day Reuben on ”Rye” Paleo Wrap Primal

Ingredients

  • 3 lb corned beef brisket prepared & sliced (made ahead or using leftovers)
  • Swiss cheese slices
  • Sauerkraut
  • Green "Russian" Dressing (see recipe)
  • "Rye" Paleo Wrap (see recipe)

Directions

  1. Smother each half of the wrap with Green Russian dressing

  2. Add a layer of swiss cheese to the bottom wrap

  3. Top with hot/heated corned beef slices & sauerkraut

  4. Add another slice of swiss cheese


  5. Green Russian Dressing ~

  6. 1 ripe avocado

  7. 2 tbsp hot sauce

  8. ¼ cup heavy cream or coconut milk

  9. Juice of ½ a lemon

  10. 1 tbsp grated horseradish (I actually added 2 tbsp because I like it zingier)

  11. 1 tsp blackstrap molasses (optional)

  12. ½ teaspoon ground ginger

  13. ½ teaspoon garlic powder

  14. 2 tbsp chopped curly parsley leaves

  15. 1 shallot, finely chopped

  16. 1 dill pickle spear, finely chopped

  17. Salt to taste

  18. “Rye” Caraway Wraps ~
  19. 2 cups tapioca flour

  20. 2 eggs

  21. 1 ½ cups water

  22. ¼ tsp baking soda

  23. Pinch of salt

  24. Dash of garlic powder

  25. 1 tbsp caraway seeds

  26. 1 tbsp ghee or butter chopped Ghee or butter for pan

  27. Beat egg and add water

  28. Add garlic powder, salt, baking soda and blend well

  29. Mix in tapioca flour until well incorporated, the mixture will be thin

  30. Add the caraway seeds

  31. Heat skillet to medium high temp, grease with a tsp or less of butter or ghee

  32. Pour in batter to cover the skillet (not too thin but no more than ½ inch)

  33. Cook until slightly browned, approximately 3 minutes

  34. Flip and cook the other side another 2-3 minutes being careful not to burn

  35. Cut in half and transfer to a 350F oven directly onto rack and allow to dry/crisp a bit

  36. Top with the second wrap
