Thai Lettuce Wraps

Serves 4 people

Ingredients

  • 2 lbs Ground Beef
  • 2 small shallots
  • 2 cloves garlic
  • 1 jalapeno, minced and seeded
  • 2 tbsp Asian Fish Sauce
  • 1 tsp Sriracha (Chile Sauce), plus extra for serving
  • Juice of 1 lime
  • 1 tsp sweetener of choice (I used stevia)
  • fresh choped mint, basil, and cilantro (about 2 tbsp of each)
  • leaf lettuce like romaine or boston bib, slivered almonds

Directions

  1. In a bowl combine beef, finely chopped garlic and shallots, and jalapeno. Brown beef mixture in skillet.

  2. While mixture is browning, in a small bowl, whisk together fish sauce, lime juice, sriracha, and sweetner. Set aside.

  3. When beef mixture is cooked, drain and transfer to a mixing bowl. Add fish sauce mixture and stir well. Add chopped herbs, (salt and pepper if you like as well), and mix thoroughly.

  4. To serve, use a leaf of lettuce and add desired amount of beef mixture. Top with almonds and extra sriracha! Enjoy!
