Crispy Potato-Crusted Snapper

Serves 4 people

Ingredients

  • 1/2 c buttermilk
  • 2 cloves garlic
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • 3/4 c instant potato flakes (not granules)
  • 4 red snapper or firm white fish fillets (about 6 oz each)
  • 1 Tb butter
  • 4 lemon wedges

Directions

  1. In small bowl, combine buttermilk, garlic, pepper, and salt. Place potato flakes in another small bowl. Dip fish fillets into buttermilk mixture, shaking off excess, then dredge in potato flakes. Repeat to coat all fillets.

  2. Melt butter in large nonstick pan over medium-high heat. Add fish and cook 3-5 minutes on each side, or until fish is golden and flakes when tested with a fork. Squeeze lemon juice of 1 lemon wedge over each fillet.
