Roasted red pepper and garlic tostinis

Ingredients

  • 1 tablespoon plus 1 tablespoon olive oil
  • 1 head garlic
  • 2 red bell peppers, seeded and quartere
  • 1 french baguette, cut into 1/4-inch slice
  • Salt and black pepper
  • 1/2 cup crumbled feta cheese

Directions

  1. Coat the bottom of the slow cooker with 1 tablespoon of the oil.

  2. Cut the top off the head of garlic and place the entire head, minus the top, in the center of the slow cooker

  3. Stack the bell peppers on the bottom of the slow cooker along the edges

  4. Drizzle the remaining 1 tablespoon of oil over the top of the garlic and peppers

  5. Cover and cook on low for 5 hours

  6. Preheat the oven to 350 degrees F

  7. Place the slices of bread on an ungreased cookie sheet

  8. Sqeeze one clove of garlic on each slice of bread, and spread it across the surface

  9. Slice the red peppers and equally distribute them over the tops of each slice of bread

  10. Season each piece with salt and pepper to taste and top with feta cheese

  11. Bake in oven for 10 minutes, or until cheese has started to melt

  12. Serve immediately

  13. Makes approximately 16 Tostinis
