Spicy Sausage Soup

Serves 4 people

Ingredients

  • 3 spicy bratwurst or hot italian sausages
  • 1 yellow onion, sliced
  • 5 cloves garlic, chopped
  • 3 green chiles, roasted and chopped
  • 2 chipotle chiles in adobo sauce, seeded and chopped
  • 2 tomatillos, cut into quarters
  • 1 large tomato, chopped
  • 1 tablespoon dried oregano
  • 1/2 teaspoon paprika
  • 2 (15-ounce) cans garbanzo beans, drained and rinsed
  • 3 cups chicken stock
  • Cilantro

Directions

  1. In a medium-sized pot, boil the sausages until cooked through, about 10 to 15 minutes

  2. Add all ingredients except for the cilantro to the slow cooker

  3. Stir until all of the ingredients are mixed well

  4. Cover and cook on low for 6 to 8 hours

  5. Approximately 30 minutes before serving, remove the sausage from the slow cooker and cut into 1/4-inch slices

  6. Return to the slow cooker, cover, and continue cooking until warm

  7. Spoon into individual bowls and garnish, if desired, with cilantro
