Tequila Chicken

Serves 3 people

Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • 3/4 cup margarita mix
  • 1/4 cup tequila
  • 1 tablespoon dried basil
  • 1 teaspoon cayenne
  • 1 teaspoon ground cumin
  • 3-4 boneless chicken breasts
  • Lime wedges
  • 1 tablespoon all-purpose flour
  • 1 tablespoon water

Directions

  1. In a small bowl, combine olive oil, honey, margarita mix, tequila, basil, cayenne, and cumin until well blended

  2. Fork holes in the chicken put in the slow cooker

  3. Top with the olive oil mixture

  4. Cover and cook on low heat for 5 to 6 hours

  5. When the chicken is cooked, remove and keep warm in an oven set at 200 degrees F

  6. In a seperate bowl, mix the flour and water until well blended

  7. Stir into the liquid in the slow cooker

  8. Turn heat to high, and cook, uncovered, for 10 minutes, until the liquid thickens

  9. Add more flour and water if a thicker sauce is desired

  10. Remove the chicken from the oven and cover generously with the sauce

  11. Serve over Spanish rice
