Pork Chops with Raspberry Chipotle Sauce

Serves 4 people

Ingredients

  • 4 boneless pork chops
  • 1 cup raspberry jam
  • 2 chipotle peppers in adobo sauce, finely chopped
  • 1/2 cup chicken stock

Directions

  1. Whisk together the jam, chipotles, and stock in a medium-sized bowl

  2. Place two pork chops in your slow cooker and cover with half of the raspberry sauce

  3. Stack remaining two pork chops on top and cover with remaining sauce

  4. Cover and cook on low for 5 to 6 hours

  5. Serve with rice and a salad
