Edamame Salsa

Ingredients

  • 2/4 cup frozen shelled edamame, thawed and patted dry
  • 1 medium tomato, diced
  • 1/2 medium cucumber, peeled and diced
  • 1/2-1 medium fresh jalapeno, seeds and ribs discarded, finely chopped
  • 1/4 cup finely chopped red onion
  • 2 Tbsp snipped fresh mint
  • 2 tsp grated lemon zest
  • 2 Tbsp lemon juice
  • 2 tsp EVOO
  • 1/8 tsp salt
  • CAN ADD- corn, red peppers, avocado, etc.
  • OR
  • 11/2 cups frozen shelled edamame beans, thawed
  • 1/2 medium red bell pepper, diced (1/2 cup)
  • 1/4 cup diced purple onion
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons fresh lime juice
  • 1 tablespoon olive oil

Directions

  1. Stir together all ingredients, serve
