Puréed Broccoli Soup

Ingredients

  • Topping
  • 1 Tbsp + 1 tsp EVOO
  • 2 tsp grated lemon zest
  • 1 Tbsp fresh lemon juice
  • 1/8 tsp salt
  • Soup
  • 1/4 cup + 2 Tbsp finely chopped reen onions (divided use)
  • 2 cups FF low-sodium (veggie) chx broth
  • 12 oz fresh or frozen broccoli florets
  • 1/8 tsp cayenne

Directions

  1. Stir together topping ingredients- set aside

  2. Spray saucepan with cooking spray

  3. Cook green onions over medium-high heat for 1 minute- stirring once or twice

  4. Pour broth into pan, increase heat to high, bring to a boil

  5. Stir in broccoli and cayenne, return to boil, reduce heat and simmer (covered) for 2-3 minutes

  6. Process soup in food processor until smooth

  7. Drizzle topping mixture over each serving, sprinkle with green onions
