Citrus kale

Ingredients

  • 2 quarts water
  • 8 oz chopped kale, stems discarded
  • 1 tsp olive oil
  • 1/4 cup sweetened dried cranberries
  • 2 Tbsp balsamic vinegar
  • 1 tsp bottled minced garlic or 2 medium garlic cloves, minced
  • 1/8 tsp salt
  • 2 tbsp fresh orange juice
  • 1 tsp grated orange zest

Directions

  1. Bring water to a boil

  2. Cook the kale, uncovered for 8 minutes

  3. Drain under cold water

  4. In large skilled, heat oil to coat bottom

  5. Cook kale, cranberries, vinegar, garlic and salt for 2-3 minutes

  6. Stir in orange juice and zest
