Flourless Chocolate Torte

Ingredients

  • 12 oz dark chocolate
  • 8 eggs, large, separated
  • 2/3 cup light brown sugar
  • 1/4 tsp salt
  • 12 tbsp unsalted butter
  • 1 tbsp vanilla extract

Directions

  1. preheat oven to 325, grease and flour a 9" springform pan, put a circle of parchment paper on the bottom if you want to.

  2. in a sauce pan or double boiler melt chocolate and butter very slowly

  3. beat egg whites and salt for 30 seconds, add 1/2 the sugar and beat until soft peaks form, add the other 1/2 of sugar and beat for 2 more minutes.

  4. when chocolate and butter are melted remove from heat, stir in egg yolks and vanilla.

  5. add 1 cup beaten egg whites to chocolate and fold to lighten chocolate. add lightened chocolate mixture to egg whites and fold until only a few white streaks show.

  6. bake for about 45 min or until firm around the edges but not quite set in middle. you can cook with a cake pan of hot water in the oven to prevent cracking. refrigerate after cooled to room temp. to finish setting and serve cold or at room temp.
