Pasta with Zucchini and Ricotta

Ingredients

  • 1/2 lb pasta
  • 2 sm zucchini, trimmed and quartered lengthwise, 1-1/2in lengths
  • 3 garlic
  • thyme
  • 1 pt cherry tomatoes, halved
  • 1 lemon, zested, wedges
  • 2 oz ricotta salata plus more

Directions

  1. Prepare pasta.

  2. Sauta zucchini, without tossing, 5 min

  3. Add garlic, thyme, 3 min.

  4. Add tomatoes, salt, 6-7 min

  5. Add pasta, lemon zest, cheese.

  6. Serve w/black pepper, more thyme, ricotta, lemon
