Shrimp Etouffee

Ingredients

  • Shrimp
  • Roux: 6TB butter, 1/2 c flour
  • 4 c chp onions
  • 2 c chp green peppers
  • 2 c chp celery
  • 2 TB garlic
  • 14oz can tomatoes
  • 2 bay leaves
  • (1/2 t cayenne)
  • cajun seasoning
  • green onions
  • calls for 1 qt shrimp stock - start with less

Directions

  1. Prepare roux – 10 min til looks like peanut butter.

  2. Add veggies – 10 min

  3. Add tomatoes

  4. Season – cook 45 min

  5. Add shrimp just til done, parsley

  6. Serve over rice, topped with chp green onions
