Crunchy chopped salad

Ingredients

  • 1/2 red onion, roughly sliced
  • 5 radishes, sliced
  • 2 carrots, roughly sliced
  • 1/2 cucumber, sliced
  • 2 tomatoes, thickly sliced
  • 1 Cos lettuce, washed and separated
  • 1 Little Gem lettuce, washed and separated
  • 3 tbsp extra-virgin olive oil
  • 1 tbsp herb vinegar
  • 2 tbsp sunflower or pumpkin seeds, toasted
  • 2 tbsp poppy seeds
  • 1 apple, grated

Directions

  1. Place the onion, radishes, carrots, cucumber, and tomatoes on a large chopping board and chop with a large knife until roughly the same size. Chop both the lettuces into the vegetables, scoop into a bowl and toss well.

  2. Season with salt, pepper, olive oil and vinegar. Toss with the seeds and the grated apple to serve.
