Cottage Grove Green Been Casserole

Ingredients

  • 2 cans French style green beans
  • 2 tbs. butter
  • 2 tbs. flour
  • 1 tsp. salt
  • 1 tbs. minced onion (moistened in water)
  • 1 cup sour cream
  • 2 cups grated Swiss cheese
  • 1 tbs. butter (melted)
  • 1/2 sleeve Ritz cracker crumbs
  • 1 cup shredded Swiss cheese

Directions

  1. Melt 2 tbs butter and add flour. Make a roux. Add sour cream and stir with wisk until blended, adding minced onion and salt.

  2. Add butter/sour cream mixture to drained green beans in a large bowl.

  3. Gently cut in the Swiss cheese.

  4. Mix thoroughtly and pour into a Pyrex baking dish (13×9).

  5. For topping, spread 2 cups shredded Swiss cheese over green beans in baking dish

  6. Spread cracker crumbs over that layer.

  7. Drizzle melted butter lightly over the crumbs.

  8. Bake at 350 degrees for 30-40 minutes.
