BLUEBERRY STREUSEL COFFEE CAKE

Ingredients

  • STREUSEL
  • 1/2 cup chopped pecans
  • 1/4 cup light brown sugar packed
  • 3 tblsp butter melted
  • 1/2 tsp cinnamon
  • CAKE
  • 1 pkg yellow cake mix (18.25 oz)
  • 1 8oz cream cheese room temp.
  • 1/2 cup oil
  • 1/2 cup sugar granulated
  • 1/4 cup whole milk
  • 3 large eggs
  • 1 1/2 cup blueberries fresh -
  • frozen unthawed

Directions

  1. SPRAY 13 X 9 pan with Pam.

  2. FR STRESEL

  3. Place all ingredients in bowl and stir until well combined.

  4. Place rest of ingrediants in a large mixing bowl

  5. Blend with mixer on low speed for 1 minute – scrape down bowl increase speed to medium and beat 2 more minutes more scraping down sides of bowl.

  6. Batter should be thick

  7. Pour batter into pan smoothing out.

  8. Scatter blueberries on top of batter.

  9. Drop Streusel mixture by teaspoon full over blueberries.

  10. Bake until golden brown & springs back when pressed w/ finger.

  11. 350 degrees 45 — 47 minutes.
