Parmesean lemon-pea couscous

Serves 6 people

Ingredients

  • 1 cup chicken broth
  • 1/4 cup wate
  • 2 tsp evoo
  • 1 cup whole wheat couscous
  • 1 1/2 (or less frozen peas
  • 2 TBSP chopped fresh dill
  • 1 tsp freshly grated lemon zest
  • salt pepper to taste
  • 1/2 cup of more freshly grated Parmesean cheese

Directions

  1. Combine broth, water, and oil in large saucepan

  2. Bring to a boil

  3. Stir in couscous and remove from heat.

  4. Cover and let plump for 5 minutes

  5. Meanwhile cook peas as directed

  6. Add the peas, dill, lemon zest, salt, pepper to the couscous

  7. Mix gently and fluff with fork

  8. Serve hot, sprinkled with cheese.
