Chicken and Rice Casserole

Serves 6 people

Ingredients

  • 2 cans cream of chicken soup
  • 3 cups cooked rice (1 cup rice, 2 cups water-boil and then simmer 30 min)
  • 1 1/4 tsp onion powder
  • 1/2 tsp ground pepper
  • 4 boneless chicken breasts cubed
  • 8 oz shredded cheddar cheese
  • 16 oz frozen mixed veggies

Directions

  1. Cook rice.

  2. Preheat oven to 350 degrees.

  3. Mix all ingredients (except cheese).

  4. Add rice.

  5. Put in 9×13 pan.

  6. Bake 45 minutes uncovered.

  7. Add cheese and bake ten more minutes.
