Penne With Chicken and Broccoli

Ingredients

  • 8oz Whole Wheat Penne Pasta
  • 3c Broccoli Florets
  • 1lb Chicken Breasts, Bite Size Pieces
  • 1tsp Adobo Seasoning
  • 2Tbsp Olive Oil
  • 1 Garlic Clove, Minced
  • 1/4c Light Mayonnaise
  • 1/8tsp Black Pepper
  • 2Tbsp Shaved Parmesan Cheese

Directions

  1. Cook pasta according to directions.

  2. Add broccoli for the last 5min of cooking.

  3. Drain well.

  4. In a medium bowl combine chicken and adobo seasoning.

  5. Heat oil in a skillet over medium high.

  6. Add garlic and cook for 30sec.

  7. Add chicken and cook 3-4min.

  8. Add chicken to drained pasta and broccoli.

  9. Stir in mayonnaise and pepper.

  10. Cook over low until heated through.

  11. Sprinkle with parmesan cheese.
