Chili Style Vegetable Pasta

Ingredients

  • 2-14oz Cans Diced Tomatoes, No Salt, Not Drained
  • 1-15oz Can Garbanzo Beans, Rinsed and Drained
  • 1-15oz Can Red Kidney Beans, Rinse and Drained
  • 1-8oz Can Tomato Sauce
  • 1c Finely Chopped Onion
  • 1c Chopped Green or Yellow Sweet Pepper
  • 2-3tsp Chili Pepper
  • 2 Garlic Cloves, Minced
  • 1/2tsp Dried Oregano, Crushed
  • 1/8tsp Cayenne Pepper
  • 8oz Whole Wheat Wagon Wheel Pasta
  • 1/2c Shredded Cheddar Cheese, Reduced Fat

Directions

  1. In a slow cooker combine tomatoes, garbanzo beans, kidney beans, tomato sauce, onion, sweet peppers, chili powder, garlic, oregano and cayenne pepper.

  2. Cover and cook on low for 5-6hr or high 3hr.

  3. To serve, cook pasta according to package.

  4. Drain and serve bean mixture over pasta.

  5. Sprinkle with cheese.
