Roasted Potatoes

(from rosie’s recipe box)

use small potatoes, Honey Gold are good

Serves 4 people

Ingredients

  • 24-28 oz. bag honey gold potatoes
  • 1/3 cup olive oil
  • 3/4 teaspoon salt
  • Italian seasoning
  • 1/4 teaspoon pepper

Directions

  1. Preheat oven.

  2. Wash potatoes.

  3. Boil them for 15 minutes, drain.

  4. Put the rest of ingredients into a serving bowl and stir. Add the potatoes, mix.

  5. Roast at 350 for 40 minutes.

  6. Roast at 425 for 25 minutes.

  7. Stir, turn over half way through cooking time.
