Penzey’s Zucchini Pancakes

Serves 12 people

Ingredients

  • 1 1/2 c. Zucchini
  • 1 c. Flour
  • 2 Eggs
  • 1/2 c. Milk
  • 1 tsp. Baking Powder
  • 1/2 -1 tsp. Salt
  • 1 Tbs. Oil
  • 1/2 c. Parmesan Cheese
  • 1/2 tsp. Granulated Garlic
  • 1/4 tsp. Pepper
  • 1 tsp. Basil
  • 1/4 tsp. Rosemary
  • 1- 2 Tbs. Butter
  • Maple Syrup
  • Jelly or fruit (optional)

Directions

  1. In a bowl beat flour, eggs, milk, baking powder, salt and oil until blended.

  2. add everthing else.

  3. Cook like normal pancakes (about 4 min. each side) until brown.

  4. Serve with syrup and fruit.
