Root Beer Pulled Pork Sandwiches

Ingredients

  • 1 bone-in pork shoulder (5-6#)
  • 1 envelope onion soup mix
  • 3/4 tsp coarse salt
  • 1/2 tsp pepper
  • 1 can 12 oz root beer
  • 2 cups BBQ sauce (divided)

Directions

  1. Place pork on a cutting board and sprinkle with onion soup rub all over pork.

  2. Sprinkle with s & P

  3. Place in a 4 quart or larger slow cooker.

  4. In a medium bow., whish together root beer and 1/2 cup BBQ sauce.

  5. cook on low 10-11 hours or until internal temp is about 190 degrees.

  6. Remove pork to a cutting board and let it cool slightly.

  7. Pour and reserve about 3/4 cup of juices from slow cooker.

  8. Pour a cup of liquid; discard fat for about 3/4 cup

  9. Use 2 forks to shred pork, discarding any fatty pieces

  10. Place all the pork back into cooker with reserved juices.

  11. Add remaining BBQ sauce

  12. Stir to combine

  13. Re-cover;cook on high 15-20 minutes or until hot and bubbly
