Cindy’s Squash Galette

Ingredients

  • 2-1/2 c thinly sliced squash, salted, drained
  • Piecrust
  • Combine: 3/4 c ricotta, 1/4 c mozzarella,
  • 1/2 c parmesan with 1 t olive oil, s&p
  • (if desired, lemon peel & juice)
  • egg yolk + 1 tsp water

Directions

  1. Roll out crust.

  2. Leaving 1"border, top w/cheese, then squash.

  3. Drizzle w/olive oil.

  4. Lightly sprinkle w/Parm or herbs

  5. Folk and pleat edges of crust. Brush w/yolk.

  6. 400/35-40
