Honey Smashed Yams

Ingredients

  • 2 large yams, peeled and cut into 1/2 - inch thick rounds
  • 1 cup chicken stock
  • 1 tablespoon butter or margarine
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon cayenne
  • Juice of one lime
  • 3 tablespoons honey
  • 1/2 teaspoon salt

Directions

  1. Place sliced yams, stock, and butter in slow cooker

  2. Cover adn cook on low for 6 to 7 hours

  3. When yams are tender, smash with a potato masher

  4. Add the remaining ingredients, stir, and serve

  5. Top with sour cream if desired

  6. Makes 4-5 servings
