Orange Poppy Seed Cupcakes

Ingredients

  • 12 lg egg whites at room temp
  • 1 1/4 t cream of tartar
  • 1/4 t salt
  • 1 t vanilla extract
  • 1/2 t orange extract
  • 3/4 c splenda
  • 3/4 c whole grain pastry flour
  • 1 T poppy seeds
  • 1 c whipped topping

Directions

  1. at oven to 350.

  2. Line 18 muffin cups with liners.

  3. Combine ingredients into batter in the order they are listed.

  4. Fold in flour and poppy seeds last.

  5. Fill muffin cups to just over tops.

  6. Bake til golden and dry 20-25 min.

  7. Mix whipped topping with orange extract to top.
