Black Bean and Goat cheese tostadas

Ingredients

  • 4 8" whole wheat tortillas
  • 2 t olive oil
  • 1 minced garlic clove
  • 1 15 oz can black soybeans
  • 4 oz goat cheese, crumbled
  • 1/2 head romaine lettuce, chopped
  • 2 med tomatoes, diced.
  • 3 scallions thinly sliced
  • 1 lime quartered
  • salt and pepper

Directions

  1. ray tortillas with pam and bake 10 min at 400.

  2. Meanwhile, heat oil in skillet and saute garlice. Add beans and heat. Season with salt and pepper.

  3. While torillas are still on baking sheet, top with beans and cheese and bake til melty (another 5 min or so).

  4. Top with other ingredients and squeeze lime over top.
