Stuffed cherry tomatoes

Ingredients

  • 1/2 c light mayo
  • 2 T fresh parsley, chopped
  • 1/4 c green onion, finely chopped
  • 1/2 c grated fresh parmesan
  • 1 lb turkey bacon, cooked and crumbled
  • 1 box cherry tomatoes
  • Seasoning to taste

Directions

  1. Wash tomatoes and cut off bottom slightly.

  2. Hollow out th ecenter with a grapefruit spoon and tip upside down on a paper towel to drain.

  3. mix mayo, parsley, onion, parmesan, and bacon together and season to taste.

  4. Stuff tomatoes and serve.
