Lemony Hummus

Ingredients

  • 1 can chickpeas (drained with 1/4 cup liquid reserved)
  • 3 cloves minced garlic
  • 1/4 c lemon juice
  • 1 T olive oil
  • 1 c roasted red peppears (canned in water) finely chopped

Directions

  1. In blender, puree chickpeas and reserved liquid, garlic, lemon juice, and olive oil

  2. Chill at least 2 hours.

  3. Top with sliced peppers.
