Beef and Zucchini Medley

Cook time: 10 minutes
Serves 6 people

Ingredients

  • 1 lb ground beef
  • 1/2 cup chopped onion
  • 1 medium zucchini, sliced
  • 1 10-oz can tomato soup
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1 tsp oregano
  • 1/2 tsp chili powder
  • 1 medium tomato, sliced
  • 1/2 cup Cheddar, grated

Directions

  1. Brown beef, add onion and cook until tender.

  2. Drain fat, add zucchini and sauté 1 minute.

  3. Add soup and seasonings; cover and simmer 10 minutes.

  4. Add tomato and sprinkle with cheese; cover and heat until cheese melts.

  5. Serve over rice.
