Lime Cloud Pie

Ingredients

  • 1/2 cup evaporated milk
  • 1 Tablespoon gelatin
  • 1/4 cup water, cold
  • 4 eggs, separated
  • 1/2 cup lime juice (3 limes)
  • 1 cup sugar (divided in half)
  • 1/2 teaspoon salt
  • 5 drops green food coloring
  • 9 inch baked graham cracker crust

Directions

  1. Sprinkle gelatin over cold water.

  2. Mix egg yolks and lime juice in saucepan and cook over low heat, stirring constantly until thickened.

  3. Remove from heat.

  4. Add 1/2 cup of sugar, gelatin, salt, and food coloring.

  5. Chill 10 minutes until mixture begins to thicken.

  6. Chill evaporated milk in tart pan in freezer until ice crystals form.

  7. Beat egg whites stiff.

  8. Add 1/2 cup sugar.

  9. Fold into lime mixture.

  10. Place in pie shell and chill.
