BAKED ZITI

(from Ruh’s recipe box)

I double recipe using two 8X8 aluminum pans and FREEZE one. or double in 9 X 13 pan

Cook time: 35 minutes
Serves 6 people

Ingredients

  • 1/2 pound cooked ziti
  • 1/2 pound spicy sausage ( I used Italian Hot)
  • 1/2 onion diced
  • 2 cloves garlic minced
  • 1- 14.5oz can Italian style diced tomatoes with juice.
  • Oregano
  • 7.5 ounce ricotta (half of standard container
  • 4.5 ounce frozen spinach (half standard package) thawed & drained
  • 1 cup mozzarella shredded plus more for top
  • 3/4 cup shredded Parmesan, plus more for top

Directions

  1. Preheat oven to 375 degrees

  2. In large saucepan brown sausage on med high heat.

  3. When half cooked add onions and garlic.

  4. cook until no pink remains.

  5. Add tomatoes and oregano and stir well.

  6. Simmer for 10 minutes.

  7. Turn heat down and add spinach, ricotta, mozzarella and parmesan.

  8. Mix until well blended. TURN OFF HEAT

  9. In large bowl combine sausage mixture with cooked ziti until well blended and there are no large sections of sausage and noodle mixture

  10. Pour into 8 X 8 pan and top with additional cheese and bake for 25 minutes or until golden brown on top.
