Lentil Soup

Ingredients

  • 1 or 2 bags of dry lentils
  • 1/2 cup carrots (chopped)
  • 1/2 cup celery (chopped)
  • 1/2 cup onions (chopped)
  • 1 tsp garlic (chopped)
  • 1 potato (peeled)
  • 1 14 oz jar of tomato sauce
  • Pasta (approx. 1/2 box)
  • 1 tsp salt
  • Oil

Directions

  1. Rinse lentils in colander

  2. Add lentils to large pot of water (1/3 lentils, 2/3 water) and bring to a boil

  3. Skim off foam

  4. Add all other ingredients

  5. Cook for 30 minutes

  6. Add 4 tbsp oil

  7. Cook for another 15 minutes

  8. Add pasta

  9. Cook for another 15 minutes

  10. Remove potato, chop it up, and put it back in the soup
