Chicken Soup

Ingredients

  • 2 chicken breasts
  • 1 chicken thigh
  • 1 tomato (cut in quarters)
  • 1 carrot (cut in 4-5 pieces)
  • 2 celery stalks (cut into 2" pieces)
  • 1 small onion (chopped)
  • Fresh parsley and basil
  • Salt
  • Pepper

Directions

  1. Remove skin and rinse chicken breasts and thigh

  2. Add chicken pieces to large pot of water until it boils (skim foam off top, as needed)

  3. Add tomato, carrots, celery, and onion

  4. Salt and pepper, to taste

  5. Cover half the pot and cook for at least 2 hours

  6. If broth tastes watery, keep cooking.

  7. At the end, add fresh parsley and basil
