Bhindi Amchur

Ingredients

  • Ladyfingers (bhindi) 200 grams
  • Dried mango powder 1 teaspoon
  • Turmeric powder 1/2 teaspoon
  • Coriander powder 1 tablespoon
  • Salt to taste
  • Fennel seeds (saunf),crushed 1 teaspoon
  • Garam masala powder 1/2 teaspoon
  • Red chilli powder 1/4 teaspoon
  • Roasted cumin powder 1 teaspoon
  • Chaat masala 1 teaspoon
  • Fresh coriander leaves,chopped 1 tablespoon
  • Oil 2 tablespoons

Directions

  1. Mix turmeric powder, coriander powder, salt, crushed fennel seeds, dried mango powder, garam masala powder, red chilli powder, roasted cumin powder, chaat masala, coriander leaves in a bowl.

  2. Trim the lady fingers at both ends, make a slit on one side without cutting through. Stuff the masala mixture into the slits of ladyfingers.

  3. Heat oil in a non-stick pan, add the stuffed ladyfingers and cook on a low heat for 2-3 minutes. Sprinkle the remaining masala on top, cover and cook for 5 minutes. Remove the cover and cook for 5 more minutes. Serve hot.
