Beef Barley Soup

Ingredients

  • 2 C diced carrots
  • 2 C diced celery
  • 1 medium chopped onion
  • 8 beef bouillon cubes
  • 1 lb beef cut in small pieces
  • 1 lb fresh mushrooms sliced
  • 1 gal chicken broth
  • 1 lb barley
  • 1/2 C veg oil
  • Pepper to taste
  • No salt needed if bouillon cubes added....salty enough

Directions

  1. Saute carrots, celery, onions in oil until tender.

  2. Add remaining ingredients and cook on low for 90 mins.

  3. Freezes well.
