Lemon Blueberry Muffins

Ingredients

  • 2 cups Bisquick/baking mix
  • 1/2 cup plus 2 tablespoons sugar, divided
  • 1 egg
  • 1 cup sour cream (8 ounces)
  • 1 cup fresh or frozen blueberries
  • 2 teaspoons grated lemon peel

Directions

  1. Combine Bisquick and ½ cup sugar.

  2. Whisk egg and sour cream

  3. together, stir into dry ingredients.

  4. Fold in blueberries.

  5. Fill muffin cups half full.

  6. Combine lemon peel and remaining sugar, sprinkle over batter.

  7. Bake at 400 for 20-25 minutes or till toothpick comes out clean.

  8. Makes 1 dozen
