Ingredients

  • 2 cups chopped parsley (I used chervil)
  • 1/2 cup couscous, or failing that, quinoa
  • 2 cloves of garlic
  • a handful of black olives
  • a handful of capers
  • 3 tomatoes dry
  • 50 grams of feta cheese
  • 6 anchovies in olive oil
  • 3 tablespoons extra virgin olive oil
  • 2 tbsp lemon juice
  • Salt
  • Pepper

Directions

  1. The first is to hydrate the tomatoes in a bowl with water for at least 15 minutes. Dry and set aside.

  2. prepare the quinoa with water twice the desired amount, cooking in water for 15 minutes. Drain and reserve.

  3. Wash and dry them well parsley. Chop fine in a table.

  4. Peel the garlic and cut into thin slices.

  5. Cut the dried tomatoes into strips, and do the same with the cheese.

  6. Mix all the ingredients and prepare the dressing.

  7. Serve with olives cut into rings and anchovies above.

  8. Notes – this is my own interpretation of the salad. You can read more here . You can change and combine. Surely with diced fresh tomatoes, or onions, or even some raisins, salad is to die.
