Pumpkin cupcakes

Ingredients

  • Cupcakes:
  • 2 sticks butter (softened)
  • 1 1/2 cups sugar
  • 4 eggs
  • 1 cup pumpkin puree
  • 1 tsp vanilla
  • 2 cups flour
  • 2 tsp pumpkin pie spice
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • Icing:
  • 8 oz cream cheese
  • 1/2 stick butter (softened)
  • 1 1/2 cups confectioner's sugar
  • 1 tsp vanilla

Directions

  1. Cupcakes:

  2. Preheat oven to 350 degrees and line 18 muffin cups.

  3. Beat butter and sugar together in a mixer until fluffy. Then, beat in eggs, pumpkin, and vanilla. Sift flour, pumpkin pie spice, baking powder, baking soda, and salt together; stir into pumpkin mixture.

  4. Spoon into lined muffin cups 3/4 full. Bake 25 minutes, then allow to cool completely.

  5. Beat cream cheese, butter, sugar, and vanilla until smooth and fluffy. Spread onto cupcakes.
