Fried Rice

Ingredients

  • 1 Tbsp of olive oil
  • 1 bell pepper - chopped
  • 1 med onion - chopped
  • 1 teaspoon of minced garlic
  • 10 eggs
  • 1 pkg of small shrimp (salad) - de-thawed
  • 1/2 pkg of honey ham - chopped into small strips
  • 4 cups of rice
  • 1/8 teaspoon of five spice or to taste
  • soy sauce - to taste
  • salt to taste

Directions

  1. cook rice according to box directions – i microwave mine for speed (6 min)

  2. In a separate pan scramble eggs until done.

  3. In separate large pot, saute peppers, garlic and onions until soft. add shrimp and ham and cook a few minutes until shrimp is warmed. Add spice, soy sauce and eggs. Cook a few minutes then add rice. Add 1 cube of chicken broth and 1/4 cup of water to mix. Cook until water has been cooked off.
