Bristol candied bacon

Ingredients

  • 1 cup of brown sugar
  • 1 tablespoon ancho chili powder
  • 1/4 teaspoon cayenne pepper Water as needed 1 pound of bacon, thick cut
  • Baking sheet with a ridge
  • Silpat to line tray

Directions

  1. Place the sugar and chilies into a shallow tray; add enough water to turn it into a slurry the thickness of thin applesauce. Dip a strip of bacon into the sugar slurry and coat both sides.

  2. Place bacon on the Silpat on a clean tray and bake at 425 degrees for 12-15 minutes for thick cut, or a little less time for thinner cut bacon. Use tongs to place bacon on a cooling rack. Wait until cool and enjoy!
