Gran’s Vegetable Soup

This is Dale’s favorite soup

Cook time: 120 minutes
Serves 8 people

Ingredients

  • 1 lg. onion
  • 4 cloves garlic
  • 1 c. water or broth
  • 1 pkg. Morning Star Crumbles
  • 3 lg. potatoes, cubed
  • 4 carrots, diced
  • 3 stalks celery, chopped
  • 2 bay leaves
  • 1 can red kidney beans
  • 1/2 head cauliflower, cut into small pieces
  • 1 can green beans
  • 1/2 head cabbage, cut into small pieces
  • 1 can corn
  • 1 stick butter
  • 1 lg. can tomato juice
  • 1 T. salt
  • 1 t. pepper
  • 1/4 c. olive oil

Directions

  1. Put all ingredients into a very large pot and bring to a boil. Reduce heat and simmer on low for 2 hours.
