Easy Jambalaya

You can increase amounts of veggies in saute, can also add other veggies you like. I’ve added 1 cup chopped okra for a more authentic Jambalaya, it was great.

Ingredients

  • 1 tablespoon olive oil
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper
  • 1/2 cup chopped celery
  • 1 16-oz package kielbasa, cut into 1/4 inch rounds
  • 1 28-oz can diced tomatoes
  • 1 8-oz box jambalaya, Spanish or fiesta-flavored rice mix
  • 1 lb. peeled and deveined raw shrimp
  • 1/4 teaspoon hot pepper sauce (optional)

Directions

  1. Heat the oil in a saucepan over medium heat; stir in chopped onion, bell pepper, celery if you’re using, saute until soft, about 10 minutes.

  2. Add the kielbasa. Cook until browned,

  3. about 4 minutes.

  4. Add the tomatoes and their liquid along with 1/2 cup of water. Bring to a boil.

  5. Add the rice mix (and seasoning package if that is separate). Reduce heat, cover, and cook for the time specified on the rice package.

  6. Add the shrimp, stir, cover, and cook until pink, about 3 to 4 minutes.

  7. Add the hot pepper sauce (if using). Enjoy!
