Lentils in a Sauce

Ingredients

  • 1 cup lentils
  • 1 med onion, finely chopped/grated
  • 1 med ripe tomato, grated
  • 2 garlic cloves, minced
  • 4 tablespoons finely chopped parsley
  • 2 tablespoons finely chopped cilantro
  • 1 1/2 teaspoons paprika
  • 1 teaspoon cumin
  • black pepper, to taste
  • 1 1/2 teaspoons salt
  • 1 tablespoon olive oil

Directions

  1. Pick over and wash lentils

  2. Place lentils>pepper and 3 cups water in medium pot on medium-high heat

  3. Bring to boil; lower heat to low and partially cover

  4. Cook gently for 20 minutes

  5. Add salt and stir well

  6. Cook, partially covered, 20-30 minutes, or until lentils are tender

  7. Stir in oil
