Herbed Basmati Rice

Serves 4 people

Ingredients

  • 2 tsp. margarine
  • 1 garlic clove, minced
  • 1/2 cup uncooked basmati rice
  • 1 cup water
  • 1/4 tsp salt
  • 2 TBSP thinly sliced green onion tops
  • 2 tsp minced fresh basil
  • 1 tsp minced fresh thyme
  • 2 TBSP Parmesan cheese
  • Thyme sprigs(optional)

Directions

  1. Melt margarine in small saucepan over medium heat.

  2. Add garlic, sauté 1 minute.

  3. Add rice;stir well.

  4. Add water and salt, bring to a boil. Cover and reduce heat,and simmer 20 minutes or until liquid is absorbed.

  5. Stir in green onions, basil, and thyme, sprinkle with cheese;garnish With thyme sprigs, if desired.
