Crustless Apple Pie/Apple Crisp

  • 3 large Apples, peeled and cut into bit size pieces
  • 1/4 cup Sugar
  • 1/4 cup Water
  • 3/4 teaspoon Cinnamon
  • 1/4 teaspoon Nutmeg
  • 12 Lorna Dunne Shortbread Cookies
  • Vanilla Ice Cream


  1. Combine apples, water, sugar, cinnamon and nutmeg in a large saucepan and bring to a boil.

  2. Reduce heat – cover and simmer for 10 minutes until apples are tender (you can easily pierce them with a fork.)

  3. Uncover and cook 9 to 10 minutes longer until most of the liquid is gone. Remove from heat.

  4. While apples are cooking, place cookies in a Ziploc bag and crush with hands or by rolling a can over them.

  5. Layer bowls (2-4) with some cookie crumbs, then cooked apples, topped with more cookie mixture and scoop of ice cream on top.

  6. Serve immediately.
